Collard/kale/turnip/mustard greens. I have no clue where I learned to make them, but the “recipe” is stuck in my head. Probably a misunderstanding of how my grandmother fixed them. With her, I had to learn via watching and hanging outside the kitchen door like some “hungry” gargoyle. Greens are relatively easy too. Just takes years to cook.
And by years, I mean hours. Making a full pot of greens, for me… normally takes at minimum three hours.
If you ever ask me for some, you better be prepared to wait.
I had a family member tell me that all you need is 30 minutes. To cook greens.
No, I don’t eat her cooking. She also told me that beans from raw to cooked should only take 2 hours in a pot.
I soak them overnight, then cook them for 60-90 minutes.
I am excellent at making chips. Perfect for ketchup. I have a memory for the timer.
Do not need a recipe for that. Got it memorized at this point.
Crisps… not so much. I’ve tried, but they don’t come out right. I know there was some sort of thing to make them in the microwave, but since I don’t have one… well…
Sides… I’ll never make em as tasty as Doritos.
I really like making macaroni cheese with crushed tomatoes.
Still other things to learn, but as to specialty with cooking?
Greens.
